Description
VINIFICATION
The grapes come from a vineyard with an average age of 10 years. They are carefully vinified, extracting the maximum of the grape’s qualitative potential: gentle maceration, decanting for 12 hours, fermentation with selected yeasts and controlled temperatures, in order to preserve the grape variety’s characteristic aromas. Finally, the wine is kept in stainless steel vats in bâtonnage, later stabilized by the cold and bottled.
WINEMAKER’S TASTING NOTES
Color: pale yellow;
Aroma: vegetables, typical of this variety, surrounded by citrus fruits and green apple;
Body: good structure and persistence.
SERVE
Temperature: it should be served at a temperature of 8ºC-10ºC;
Suggestion: excellent with light dishes and starters of phyllo dough with meat or fish, due to its aromatic intensity and freshness. It is also suggested to accompany rice dishes flavored with dried fruits, chicken curry and other white meats.
